The Community of Madrid is, due to its geographical location, a region that enjoys the majority of ecosystems, which allows it to offer a great diversity of quality food, many of them covered by a guaranteed quality label.
Protected Designation of Origin Wines of Madrid
Madrid is the only capital of a country that gives its name to a Wine Denomination of Origin, since 1990, although in 1984 the Specific Denomination Wines of Madrid was recognized.
Of the approximately 16.000 hectares of vineyards cultivated in the Community of Madrid, more than half are under the protection of the Wines of Madrid Denomination of Origin, grouped into four sub-areas (Arganda, Navalcarner, San Martín de Valdeiglesias and El Molar ).

PROPOSAL FOR MODIFICATION OF THE APPELLATION OF ORIGIN "VINOS DE MADRID" TO MAKE SEVERAL NORMAL MODIFICATIONS
The Regulatory Council of the Designation of Origin "Wines of Madrid" has proposed the following modifications:
- New wording in the description of the wines covered by the DO.
- Modification of the analytical characteristics.
- Modification of the organoleptic characteristics.
- Modification of specific oenological practices.
- Modification of the geographical delimitation section
- Grouping of maximum yields.
- Modification of vine varieties.
- Modification of the applicable provisions.
- Other modifications: controls and data update.
This proposal involves changes in several aspects of the tender documents and the single document that are not considered Union modifications, they are normal modifications.
In accordance with article 8.6 of Real1335/2011, of October 3, which regulates the procedure for processing applications for registration of protected designations of origin and protected geographical indications in the community registry and the opposition to them, said proposal must be submitted to an opposition procedure within the member state before it is forwarded to the services of the European Commission, thus guaranteeing the proper publication of the application within a reasonable period, during which any natural or legal person who has a legitimate interest and is established or resides in its territory may declare their opposition to the modification.

Protected Geographical Indication Meat from the Sierra de Guadarrama
The Sierra de Guadarrama Meat Protected Geographical Indication guarantees the quality of 3 products from the region's cattle: Guadarrama Veal (the most popular product), Guadarrama Añojo and Guadarrama Cebón.
The production area coincides with the Sierra de la Comunidad de Madrid (Lozoya-Somosierra and part of the regions of Guadarrama, Metropolitan Area of Madrid, Campiña and Southwest), a typical livestock area due to its orographic and climatic characteristics. The animals must be of the Avileña, Charolais or Limousin breeds and come from extensive farms, where their fattening is carried out using cereals.

This Geographical Indication covers the meat of the Avileña-Negra-Ibérica bovine breed and that from the first cross between breeders of this breed and stallions of the Charolais and Limousin breeds. The production system is extensive and/or transhumant, using grazing and forestry resources (ramon and acorns). As supplementary feed, feed authorized by the Regulatory Council is used.
The production area is of a supra-autonomous nature, and includes agricultural regions of the autonomous communities of Andalusia, Aragon, Castilla-La Mancha, Castilla y León, Extremadura, La Rioja and Madrid. The Community of Madrid is also included in the production area (counties of Lozoya-Somosierra, Guadarrama, Metropolitan Area of Madrid and South Western).
Designation of Quality Campo Real Olives
The olives included in the Campo Real Olives Denomination of Quality must belong to the Manzanilla de Campo Real and Manzanilla Cacereña varieties, and are known for their particular handmade dressing with natural products such as thyme, fennel, oregano and garlic, which give it its flavor. characteristic. In addition, each producer has its own "secret" dressing and in addition to the ingredients mentioned, uses others such as bay leaf, cumin or marjoram.
The Campo Real olive represents more than 75% of the total production of the different types of table olives that are produced in the Community of Madrid.

Chinchón, in addition to a town in Madrid, is the aniseed spirit drink, sweetened or not, made from a distillation in copper stills, macerated green anise in a hydroalcoholic mixture of natural alcohols of agricultural origin. It presents four varieties: sweet, dry, special dry and extra dry.
The Chinchón anise tradition goes back a long way and its industrialization began in 1911, when 300 harvesters decided to found the Chinchón Alcohol Cooperative Society, which promoted the industrial production and bottling of this anise. The regulation that ensures the quality of the Chinchón Geographical Denomination was approved in 1991, and its production and bottling area is limited to this municipal area.
In 2019, in accordance with EU Regulation 787/2019, of April 17, which regulates the protection of Protected Geographical Indications of spirits, it was recognized as "Chinchón Geographical Indication".
Protected Designation of Origin Madrid Oil
The Madrid Oil DOP protects an Extra Virgin Olive Oil, produced, prepared and packaged in a unique space due to its orographic, climatological and soil peculiarities, and which is located in the southeast of the Community of Madrid, in the municipalities belonging to the Cuenca del Henares, La Comarca de Las Vegas and several municipalities of the South Basin, bordering to the east with the Comarca de las Vegas (a total of 38 municipalities and an olive grove area of approximately 23.600 hectares).
El Oil from Madrid It comes from olives of the majority varieties: Cornicabra, Castellana and Manzanilla Cacereña and from olives of minority native varieties: Carrasqueña, Gordal, Asperilla and Redondilla.
These varieties are perfectly adapted to the conditions of the region, ensuring a multivarietal identity not present in any other olive production area in the world. This natural assembly of main and minority varieties allows us to obtain unique sensory profiles, this being another unique hallmark of this oil.
In production, only mechanical procedures or other physical means are allowed that do not alter the extra virgin olive oil, preserving the flavor, aroma and characteristics of the fruits from which it comes.
“Aceite de Madrid” is characterized by its intense aromas of olive, almond, grass, leaf, apple, tomato and banana that are reaffirmed in the mouth along with a balanced presence of bitter and spicy attributes.
